You don’t need fancy ingredients or hours in the kitchen to get burgers that are proper tasty. These sizzling Chilli and Cheese Burgers are made from lean beef, diced onion and jalapenos, then seasoned with warming spices and packed with melty reduced-fat Cheddar for a gooey surprise inside.

  • 1 large non-stick frying pan

Ingredients

  • 250 g 5% fat lean minced beef
  • 1/2 a small red onion peeled and finely diced
  • 1 tsp mild chilli powder
  • 1 tsp garlic granules
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 50 g reduced fat Cheddar cheese coarsely grated
  • 25 g jalapenos drained and chopped
  • salt and freshly ground black pepper
  • low-calorie cooking spray

To serve

  • 4 reduced fat burger cheese slices
  • 2 tomatoes sliced
  • 1/2 small red onion peeled and sliced
  • handful of iceberg leaves shredded
  • 4 60g wholemeal rolls

Instructions

  • Place all the burger ingredients apart from the spray in a mixing bowl and using your hands, mix, pressing and squeezing together to ensure thorough mixing.
  • Press firmly into 4 equally sized burger shapes, about 1cm thick.
  • Spray a large, non-stick frying pan with low calorie cooking spray and place over a medium to high heat. When the pan is hot, add the burgers and cook for 2-3 minutes before carefully flipping and cooking for a further 2-3 minutes.
  • Fill the rolls with the tomatoes, onions and lettuce and place a burger on top. Top with a cheese slice and enjoy!

Ramp up the heat levels by using hot chilli powder and topping with extra jalapenos.

Ingredients

  • 4 stand ‘n’ stuff tortillas approx 24g each
  • 100 g tomato passata
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic granules
  • 30 g black olives in brine sliced in half
  • 4 mushrooms sliced
  • 1/4 red pepper deseeded and diced
  • 4 cherry tomatoes sliced in half
  • 30 g mozarella diced into small cubes
  • 5 g fresh basil sliced

Instructions

  • In a bowl, mix the passata, dried herbs and garlic granules until combined.
  • Place a couple of teaspoons of the mixture into each tortilla.
  • Divide the olives, mushrooms, pepper and tomatoes between the tortillas. Add the mozzarella on top.
  • Place into the air-fryer basket and cook at 160ºC for 5-8 minutes until the tortillas are crisp and golden and the cheese is melted and bubbly.
  • Sprinkle over the basil and serve with an accompaniment of your choice!

Ingredients

  • 250 g chicken breast sliced into strips
  • 1 tsp garlic granules
  • salt and pepper
  • 1 medium egg beaten
  • 50 g panko breadcrumbs
  • 200 g lettuce sliced
  • 4 cherry tomatoes sliced
  • 4 soft tortilla wraps approx 60g per wrap
  • low calorie cooking spray

For the dressing

  • 3 tbsp fat free Greek yoghurt
  • 1 tbsp light mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp garlic granules
  • 1 tsp Parmesan cheese finely grated
  • salt and pepper to taste

Instructions

  • Preheat the oven to 190ºC and line a baking tray with non-stick baking paper.
  • Add the chicken to a bowl and sprinkle over the garlic granules and season with salt and pepper, stir to coat.
  • Add the egg and panko to two bowls and dip each strip of chicken first in the egg and then into the panko and place onto the baking tray. Spray with low calorie cooking spray and cook for 20 minutes until the breadcrumbs are golden brown and chicken shows no sign of pinkness.
  • In a small bowl, combine the dressing ingredients and stir until smooth.
  • Now you are ready to assemble, lay the tortilla wraps on the work surface and spread a little of the dressing onto each wrap and top with lettuce and tomatoes. Add the chicken strips.
  • Fold in the sides of the wrap so they are just covering the filling but not touching. Bring the top section of the wrap down and over the filling, rolling up until you reach the bottom, press and hold. Slice in half and serve.

Microwave your wraps for 30 seconds to make them more soft and easier to roll.

Ingredients

For the mince

  • low-calorie cooking spray
  • 250 g 5% beef mince
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp dried oregano

  • 1 tsp Henderson's relish
  • salt and pepper to taste

For the salad

  • 2 smoked bacon medallions sliced
  • ½ red onion peeled and sliced
  • 1 iceberg lettuce approx. 500g, stalk removed and sliced
  • 80 g cucumber sliced
  • 8 cherry plum tomatoes sliced
  • 60 g sliced pickled gherkins
  • 80 g sweetcorn drained
  • 2 tbsp light mayonnaise
  • 2 tsp reduced-sugar ketchup
  • 2 tbsp vinegar from gherkins
  • ¼ tsp mustard powder
  • ¼ tsp garlic granules
  • ¼ tsp white granulated sweetener
  • 20 g reduced-fat Cheddar cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a medium frying pan with low-calorie cooking spray and place over a medium heat.
  • Add the beef mince, paprika, cumin, oregano, garlic granules, onion powder and Henderson's relish. Fry for 8-10 minutes until the juices have evaporated and the beef is cooked through. Season to taste with salt and pepper.
  • While the mince is cooking, spray another frying pan, add the onion and bacon and fry for 4-6 minutes until onion is soft and bacon cooked and crispy.
  • On your serving plates or bowls, layer up the lettuce, cucumber, tomatoes, sweetcorn and gherkins. To a small bowl add the mayonnaise, ketchup, gherkin pickle vinegar, mustard powder, garlic granules and sweetener and mix until smooth. Season to taste with salt and pepper.
  • Top the lettuce with the cooked beef mince, onion and bacon. Sprinkle over the cheese and finish with a drizzle of burger sauce dressing.

Pesto Pasta Salad | Slimming & Weight Watchers Friendly

You’ll look forward to lunch all day when you’ve packed a portion of this easy Pesto Pasta Salad. Instead of using a shop-bought pesto that’s made with oil, we’ve blitzed together avocado, basil, garlic and Parmesan to create a rich, creamy dressing. Our simple salad mixes up gooey mozzarella, crunchy pine nuts and cherry tomatoes (roasted for extra sweetness!). It’s spot on for picnics, BBQs and lunch boxes!

Ingredients

  • 250 g cherry tomatoes halved
  • low-calorie cooking spray
  • salt and freshly ground black pepper
  • 200 g small, dried pasta shapes (we used fusilli)
  • 125 g mozzarella cut into 1cm cubes
  • 25 g pine nuts
  • 25 g rocket leaves

For the pesto dressing

  • 1 small avocado stoned and peeled
  • 30 g fresh basil
  • 2 garlic cloves peeled
  • juice of 1 lemon
  • 25 g Parmesan cheese finely grated
  • 2-3 tbsp water
  • salt and freshly ground black pepper

Instructions

  • Preheat the oven to 200°C fan. Scatter the cherry tomatoes on a baking tray and spray with low-calorie cooking spray. Season with salt and freshly ground black pepper, and roast for around 15 minutes.
  • While the tomatoes roast, cook the pasta according to packet instructions (usually around 10-12 minutes in a pan of boiling water). When cooked, drain and rinse under cold running water to cool quickly. Drain thoroughly.
  • Make the dressing by placing all the ingredients, except the water and salt and pepper into a blender or mini chopper. Blitz to a smooth dressing. Use a little water to thin down if needed. It should be the consistency of thick cream. Season to taste with salt and pepper.
  • Place the drained pasta, cherry tomatoes, mozzarella, pine nuts and rocket in a mixing bowl. Add the dressing and gently toss together until well combined. Serve.
