Sweet Potato and Red Lentil Soup | Slimming & Weight Watchers Friendly

This wholesome, cosy soup couldn’t get any simpler to make! Throw everything in and let it bubble away until your ingredients are ready to blitz until smooth. The creamy natural sweetness of the potatoes makes for a gorgeous pairing with fibre-filled, protein-rich red lentils. It’s not just delicious, it’s really filling – with or without a crusty whole bread roll!

  • stick blender

Ingredients

  • low-calorie cooking spray
  • 1 medium red onion peeled and diced
  • 1 medium red pepper deseeded and diced
  • 3 garlic cloves peeled and crushed
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp mild chilli powder
  • ½ tsp ground ginger
  • 650 g sweet potato peeled and chopped into chunks
  • 100 g red lentils
  • 1 litre boiling water
  • 1 vegetable stock cube
  • 1 vegetable stock pot
  • 30 g reduced-fat cream cheese
  • salt and pepper to taste

Instructions

  • Spray a large saucepan with low-calorie cooking spray and set on a medium heat.
  • Add the onion, pepper and garlic and fry for 10 minutes.
  • Once the onions and peppers are softened and beginning to caramelise, add the paprika, cumin, chilli and ginger. Fry for 2 minutes.
  • Add the sweet potato, lentils, water, stock cube and stock pot. Bring to a boil, then lower the heat and partially cover with a lid. Simmer for 25-30 minutes.
  • The potato and lentils should be soft. Remove from the heat and blitz using a stick blender until smooth. Add the cream cheese and mix until blended, then season to taste with salt and pepper.

Ingredients

  • low-calorie cooking spray
  • 1 medium onion peeled and diced
  • 1 leek sliced
  • 3 garlic cloves peeled and crushed
  • 2 medium carrots peeled and diced
  • 2 medium parsnips peeled and diced
  • 1 celery stick diced
  • 300 g new potatoes sliced
  • 1 litre boiling water
  • 1 vegetable stock pot
  • 1 vegetable stock cube
  • 2 tbsp cornflour
  • 1 tbsp cold water
  • 100 g frozen peas
  • 2 tbsp reduced-fat cream cheese
  • salt and freshly ground black pepper to taste

Instructions

  • Spray a large saucepan with low-calorie cooking spray and set on a medium heat. Add the onion and fry for 5 minutes.
  • Once the onion has begun to soften, add the leek and garlic and continue to fry for 5 minutes.
  • Add the carrot, parsnip, celery and potatoes to the pan. Add the stock pot and stock cube to the water and mix until dissolved. Pour the stock into the pan.
  • Bring the pan to the boil then lower the heat to a simmer. Cover with a lid and cook for 25 minutes.
  • Mix the cornflour and water into a slurry and pour into the pan and stir. Add the peas and simmer for a further 10 minutes.
  • Stir in the cream cheese and blitz with a stick blender until smooth. If the sauce is a little thick, add some extra water, if it’s too thin, simmer until desired thickness is reached.
  • Season to taste with salt and freshly ground black pepper and serve.

  • 500 g diced lean beef
  • low-calorie cooking spray
  • 1 medium onion, peeled and sliced

  • 450 ml boiling water
  • 1 red wine stock pot
  • 2 tbsp tomato puree
  • 1 tbsp cornflour
  • 2 tbsp cranberry sauce
  • 1 tbsp Henderson's relish
  • 1 tbsp white granulated sweetener
  • 200 g chopped tomatoes
  • 1 orange, sliced in half
  • 6 cloves
  • 1 cinnamon stick
  • 1 star anise
  • few sprigs of fresh thyme
  • few sprigs of fresh rosemary
  • salt and pepper, to taste

Instructions

  • Preheat the oven to 170°C.
  • Season the beef with salt and pepper. Spray a frying pan with low-calorie cooking spray and set on a medium heat. Add the beef and fry for 6-8 minutes until browned on all sides.
  • Add the beef to a casserole dish along with the onion, carrot, celery and garlic.
  • To the boiling water add the stock pot, tomato puree, cornflour, cranberry sauce, Henderson's relish and sweetener. Stir to combine and pour into the dish along with the chopped tomatoes and stir.
  • Press the cloves into the surface of the orange and add to the casserole pan, nestling between the beef and veg. Add the cinnamon stick, star anise, thyme and rosemary.
  • Cover with a lid and cook in the oven for 2-2.5 hours stirring occasionally until the beef is tender, vegetables cooked and sauce reduced. Remove the orange, cinnamon and star anise and discard. Season to taste with salt and pepper and serve with mashed potatoes or your choice of accompaniment.
